Angie gave me this huge zuchinni so I decided to try to make oven fried zucchini piccata.
I first made pasta with garlic, evoo, anchovy paste, capers and lemon juice. I made the oil sauce in a pan and heated it up before mixing with the pasta. Then I cut the zucchini into medallions and soaked them in buttermilk and saracha for 20 minutes. Then i coated them in a mixture of flour, panko, garlic powder, paprika, salt and pepper. I baked these at 425 for 10 minutes, flip, 10 minutes, flip again, and 10 more minutes. YUM!
